Quinoa for dinner:

Instructions:
1. Preheat at 350°F a 12″ baking pan/frying pan/Claypot;

2. Then add 500 grams Quinoa:

3. Peanut butter Organic Smooth: (2 Tablespoon?);

4. Mix sesame/almond oil (half cup) with
 
5. 2 cups shredded purple cabbage, with

6. Organic Carrots (3 sticks) cut up with

7. Organic Sweet peppers and

8. Lime juice ;

9. Garnish with lime wedges.

10. Cook/Bake at 350°F for 45 minutes/browning on top?

11. Let stand for 15 mins,

12. Serves 4 to 6.

!2017 – Hearty Vegetarian Quinoa Chili

Ingredients(8):

1). 4 tsp (20 mL)  olive oil;

2). 2 cups (500 mL)  roughly chopped cremini mushrooms (6 oz/180 g);

3). 2  onions, diced;

4). 1  jalapeno, finely chopped;

5). 2 tbsp (25 mL)  chili powder;

6). 1 can (796 mL)  PC Blue Menu Diced Tomatoes;

7). 1 can (540 mL)  PC Blue Menu 6 Bean Medley , drained and rinsed;

8). ½ cup (125 mL)  PC Organics Quinoa.

Instructions:

1). In large saucepan, heat oil over medium heat;

2). Cook mushrooms and onions for 12 to 14 minutes, stirring often, or until golden;

3). Stir in jalapeno and chili powder, cook 1 minute longer, stirring frequently;

4). Stir in diced tomatoes and juices, beans, quinoa and 1 cup (250 mL) water;

5). Bring to a boil;

6). Reduce heat to medium-low, cover and cook for 20 minutes or until quinoa is tender;

7). Serve garnished with PC Blue Menu Yogurt Spread (or fresh Lime slices)  and chopped fresh coriander, if desired.
